This doesn't sound that great, but it is awesome!

Scalloped Corn Casserole.

1 box of Jiffy corn bread mix
1 can of whole kernel corn
1 can or creamed corn
1 cup of your favorite cheese
jalapeños (optional)

Mix it all together and bake according to the box recipe.

Updated the above link to show it was an emeril recipe. I am working on it tonight, but adding the pumpkin in is making it need to cook awful long...

The praline pumpkin goat cheese cheesecake (say that 3 times fast, I think next year I'll make toast) got rave reviews My pralines didn't firm up enough, so they blended into the rest of the cheesecake instead of making little praline pieces within, but it turned out pretty good
