A) eeeeeeeeeewwwwwwwwwwwwww A number of years ago I was prescribed zenecal. The doc that had me "try" it neglected to tell me of the side effects of eating fats while taking it... shocked Needless to say I had to quietly (and quickly) slip out of a presentation that I was supposed to give to change my outfit. 'nuff said.... smash

A: Instead of pumpkin rolls which look like an intimidating task... pumpkin cake with sugar free cream cheese icing.

I cannot find my pumpkin recipe. So this one will have to do

Pumpkin Cake I
Submitted by: D Adams
Rated: 5 out of 5 by 134 members Yields: 12 servings
"This recipe is good anytime of the year."
INGREDIENTS:
1 cup vegetable oil
3 eggs
1 (15 ounce) can pumpkin puree
1 teaspoon vanilla extract
2 1/2 cups white sugar
2 1/2 cups all-purpose flour
1 teaspoon baking soda

1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/4 teaspoon salt
1/2 cup chopped walnuts
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease one 10 inch bundt or tube pan.
2. Cream oil, beaten eggs, pumpkin and vanilla together.
3. Sift the flour, sugar, baking soda, ground nutmeg, ground allspice, ground cinnamon, ground cloves and salt together. Add the flour mixture to the pumpkin mixture and mix until just combined. If desired, stir in some chopped nuts. Pour batter into the prepared pan.
4. Bake at 350 degrees F (175 degrees C) for 1 hour or until a toothpick inserted in the middle comes out clean. Let cake cool in pan for 5 minutes then turn out onto a plate and sprinkle with confectioners' sugar.

Then the sugar free cream cheese frosting which everyone raves about. I hear how it is so flavorful.

Sugar-Free Cream Cheese Frosting

1 1/2 cups light cream cheese

1 1/2 Tablespoons margarine, softened

16 packets Equal® (16 grams NutraSweet®; each packet equaling sweetness of 2 teaspoons sugar)
(If using bulk Equal/Splenda [measures like sugar] then you would use 2/3 cup)

2 teaspoons vanilla

0-2 Tablespoons 1% milk to thin frosting

Beat together cream cheese and margarine. Then stir in Equal®, and milk until powder is moistened. Beat until smooth and spread on Cake. Frosts 2 9" round layers of cake or 9x13 cake or two dozen cupcakes.

Q: What is one of your most remembered memories or traditions surrounding Thanksgiving?
